Our August Whisky Club is just around the corner and we are very excited to share some details with you!

This whisky has undertaken a journey through maturation that has had several twists and turns as we have layered flavour and built a whisky that combines quintessential elements of a variety of cask types together in one release. This whisky started it journey in 20litre Australian Apera Casks where it spent three years developing some dried fruit, spice, and oak characteristics. We then transferred a selection of these casks into a 120L Spanish Pedro Ximenez cask for a further 2 years, which developed the sweet jammy notes and a deeper layer of spice. We finally married the whisky with a couple of experimental bourbon casks that had a heavy toast, which has brought in the toasted oak and coconut elements. What we have ended up with is a delicious whisky that one tasting panel member likened to a boozy campfire s’mores…
